Vegan treats for a sweet tooth

www.pexels.comWhether you are vegan, veggie or a meat eater, let’s face it many of us have a sweet tooth and love a piece of cake, or a cookie.

Today we have three easy to make, delicious to eat sweet recipes that are perfect for everyone how pops round for a cuppa, whatever they do or don’t eat.

Vegan coconut loaf cake

For this super simple smasher, you will need:

2 cups of full fat coconut milk
6 tablespoons of melted coconut oil
2 cups of coconut flour
Half a cup of coconut sugar
2 cups of dried, flaked coconut
2 tablespoons of baking powder
1 cup of crushed pineapple
1 teaspoon of cinnamon and one of nutmeg
1 teaspoon of lime zest

To make:
Mix together the coconut milk, crushed pineapple, and coconut oil in a bowl and then set aside. Next add the flour, coconut sugar, baking powder, flaked coconut, cinnamon, nutmeg and lime and mix together. Once smooth, pour into a loaf tin and bake at 180°C /350°F for 45 to 50 minutes, then leave to cool. Dust with a little coconut sugar, then slice and enjoy with a coconut latte.

Brilliant banana bread

We don’t know anyone who doesn’t adore banana bread and a cup of mint tea, so we have the perfect recipe to dazzle family and friends who have a sweet tooth.

For two loaves (they go fast), you will need:

8 ripe bananas
250g of maple syrup
75g of melted coconut oil
100g of sultanas
250ml of almond milk
45g of chia seeds
1 tablespoon of vanilla extract
125g of coconut flour
170g of rice flour
2 teaspoons of baking soda
1 tablespoon of baking powder
1/2 a teaspoon of sea salt
1 teaspoon of nutmeg

To make:

In a large bowl, mash six of the bananas until they are lovely and smooth, then stir in the remaining wet ingredients and mix. Got onto combine the dry ingredients and mix until you have a lump free batter. Divide the mix between two loaf tins, smooth the tops of the cakes and add slices of the remaining two bananas. Bake for 50 minutes at 180°C /350°F, then cool and eat, keeping the cakes in the fridge for freshness.

Chocolate chip cookies

Picking up vegan cookies in the shops isn’t always, easy but making them yourself, is. For these tasty treats, you will need:

250g of soft vegan butter
90g of light brown sugar
90g of dark brown sugar
1 tablespoon of vanilla extract
1 vegan egg
400g of plain flour
1 teaspoon of baking powder
1 teaspoon of baking soda
2 teaspoons of sea salt
400g of vegan chocolate chips or broken bits from a vegan chocolate bar

To make:

In a large bowl mix the butter and sugar and mix until creamy. Then add the egg and beat it in. In another bowl, sieve together the flour, baking powder, baking soda and salt and then mix the two bowls of ingredients together. At this point add the chocolate chips and fold them into the mixture. Now for the fun. Take the dough and roll into cookie size balls and place on greased baking trays.

Bake in the oven at 200C/400F for around 15 minutes, or until the tops are golden brown. Let them cool at little and then eat them warm with vegan ice cream and sliced strawberries!
